Salmon Purses with Asparagus and Pesto


Ingredients:

1 lb Salmon fillet
1 jar pesto of choice
1 sheet of puff pastry dough
8 spears of asparagus

SERVES 4

Directions:

  1. Pre-heat oven to 350°F.
  2. Cut salmon and pastry sheets into 4 even sizes.
  3. Add 1 Tbsp. of pesto diagonally onto the puff pastry and top it with 1 piece of salmon and 2 spears of asparagus.
  4. Secure the purses by bringing in one corner of the puff pastry and overlapping it with the opposite corner.
  5. Place on a baking sheet and cook in the oven for about 20 minutes.
